作者刘嘉元(2019)在《苹果醋和红曲苹果汁发酵工艺研究及苹果醋饮料的调配》一文中研究指出:苹果醋是一种酸性调味品,生产过程是将新鲜苹果进行清洗、打浆,然后接种酵母菌和醋酸菌进行酒精发酵和醋酸发酵两个阶段,最终在此工艺下得到的一种苹果深加工产品。苹果醋的营养成分中,容易引起肥胖的碳水化合物和脂类物质的含量微少,迎合现在的大众消费观念。苹果醋还具有抵抗病菌、消灭病菌、抗病毒防止血脂高、防止血压高、减少氧化、防止衰老、降低癌症发病率、预防骨质疏松的作用及美容作用。并且口感酸甜舒适,越来越得到人们的喜爱。但现在市场销售的苹果醋大多是勾兑产品,不是纯发酵饮品,并且口感有待进一步提升,所以进行苹果醋工艺的研究具有重要意义。苹果醋作为苹果的开发利用途径之一,也可以解决苹果不易储存和储存成本更高的问题。红曲菌的生产和应用在我国具有很长时间的历史,并且该菌种能够代谢生产红色素,这种代谢物质具有降低人体胆固醇的作用。本论文首先探究果浆发酵和果汁发酵两种酿造工艺对苹果醋品质的影响;其次优化果浆发酵苹果醋的发酵工艺,实验对比发酵所需温度,发酵菌接种量,发酵时间对苹果醋品质的影响,找出果浆发酵最佳工艺;然后以苹果汁为原料,红曲菌为发酵菌种,实验对比菌种添加量,发酵所需时间,发酵外界温度对红曲果汁品质的影响,优化发酵工艺;最后用苹果醋,白砂糖和红曲发酵果汁进行苹果醋饮料调配。主要研究结果为:a使用苹果汁发酵和使用苹果浆发酵所得苹果醋品质差别明显,苹果浆发酵苹果醋品质优于苹果汁发酵苹果醋,两种发酵方式所得苹果醋总酸差别微小,但果汁发酵相比果浆发酵所需时间更少,生产效率更高。通过气相色谱-质谱进行分析,醇类物质,酯类物质和酸类物质在苹果醋中含量较高,其中醇类物质所占香气比例在两种发酵方式中差别最为明显,果浆发酵为11.05%,果汁发酵为40.13%。2种发酵方式所得苹果醋的主要香气的含量差别较为明显,果浆发酵苹果醋的主要香气成分为癸酸乙酯,癸酸,乙酸苯乙酯,果汁发酵苹果醋的主要香气成分为苯乙醇,乙酸异戊酯,辛酸。果浆发酵苹果醋感官评分为91.52,果汁发酵苹果醋感官评分为82.28,通过香气成分分析结果和感官评价结果综合分析得出结论,果浆发酵的苹果醋优于果汁发酵的苹果醋,但所需发酵时间相对更久。b优化果浆发酵的工艺条件。通过实验得到最佳工艺条件为:选用ST酵母作为己经发酵菌种,酵母菌接种量为0.4%,在温度为25℃条件下进行酒精发酵,待第一阶段发酵结束后接种醋酸菌,接种量为10%,发酵温度为33℃,每天按时搅拌,进行醋酸发酵。在此工艺条件下发酵苹果醋,所需时间为18天,苹果醋总酸为3.2%,感官评分达到93.12。c进行苹果汁红曲菌发酵条件优化,通过实验得到了红曲霉苹果汁发酵的最佳条件为:将苹果洗净榨汁在摇床上后进行液态发酵,红曲菌接种量为0.3%,控制发酵温度为30℃,选择摇床转速为190 r/min进行发酵,发酵所需时间为7天,色价达到70.56,感官评分为83.12。d进行响应面法进行苹果醋饮料调配的优化,根据Box-Benhnken发进行实验设计,并通过实验结果所得到回归方程进行分析,所得苹果醋饮料最佳调配组合为:以苹果汁为基础,添加苹果醋为6%,白砂糖为10%,红曲发酵苹果汁为47%。并且通过方差分析可知对苹果醋饮料的感官评分影响大小的顺序依次为苹果醋添加量>白砂糖添加量>红曲发酵苹果汁添加量。
