作者张攀(2019)在《豆腐柴叶果胶的分离及特性研究》一文中研究指出:豆腐柴(Premna microphylla Turcz)是一种多年生落叶灌木,其叶子含有10%~30%的果胶。不同月份、不同地区豆腐柴叶果胶含量和性质存在差异,且“树叶凉粉”的品质与豆腐柴叶预处理和其含有的果胶密切相关。论文主要以四川江油地区豆腐柴叶为原料,首先对不同月份、不同地区豆腐柴叶主要成分进行测定,然后研究不同预处理对果胶特性的影响,其次对酸法和超声波辅助酸法提取果胶工艺进行优化、比较,接下来对不同月份豆腐柴叶果胶特性差异进行比较,最后对果胶在凝固型发酵乳中的应用进行初步探究。主要结果如下:不同月份、不同地区豆腐柴叶主要营养成分差异显著,江油地区豆腐柴叶含有丰富的粗蛋白、果胶、黄酮、Mg、Ca等营养成分。果胶得率(以得到果胶产品质量占豆腐柴叶粉末质量百分比计)为4.24%~18.24%,5~9月豆腐柴叶果胶得率相对较高,在15%以上,适合用于果胶提取。主成分分析法综合评价不同预处理对豆腐柴叶果胶特性的影响结果发现:虽然蒸汽、微波预处理提高了果胶得率、半乳糖醛酸含量(以果胶产品酸解后半乳糖醛酸含量计)、色泽,但相同条件下果胶凝胶特性明显降低,且综合评分从高到低为:未处理>微波>酸浸泡>蒸汽>烫漂>冷冻,说明预处理不能很好的提高果胶品质。两种提取方法结果比较表明:酸提取法果胶提取率和半乳糖醛酸含量均高于超声波辅助酸提取法,其它主要成分和性质并无明显差异,因此酸提取法较好,最佳工艺条件为:料液比1:30,提取温度88℃,提取时间2.2 h,溶液p H 1.6,该条件下10月份果胶提取率为10.57%。主成分分析法综合评价不同月份豆腐柴叶果胶特性综合评分从高到低为:9月>7月>8月>10月>6月>5月,表明不同月份豆腐柴叶果胶品质差异较大。7~9月豆腐柴叶果胶得率为15.30%~18.24%,半乳糖醛酸含量为81.48%~81.96%,凝胶、乳化性能较好,综合得分明显高于其他月份,更适合于果胶的提取利用。果胶在凝固型发酵乳中的应用研究发现:豆腐柴叶果胶添加量为0.05%时发酵乳品质佳,且接近于橘皮果胶添加量为0.15%的发酵乳。说明豆腐柴叶果胶对发酵乳稳定性作用明显,且优于普通市售橘皮果胶,有较高的应用价值。

dou fu chai (Premna microphylla Turcz)shi yi chong duo nian sheng la xie guan mu ,ji xie zi han you 10%~30%de guo jiao 。bu tong yue fen 、bu tong de ou dou fu chai xie guo jiao han liang he xing zhi cun zai cha yi ,ju “shu xie liang fen ”de pin zhi yu dou fu chai xie yu chu li he ji han you de guo jiao mi qie xiang guan 。lun wen zhu yao yi si chuan jiang you de ou dou fu chai xie wei yuan liao ,shou xian dui bu tong yue fen 、bu tong de ou dou fu chai xie zhu yao cheng fen jin hang ce ding ,ran hou yan jiu bu tong yu chu li dui guo jiao te xing de ying xiang ,ji ci dui suan fa he chao sheng bo fu zhu suan fa di qu guo jiao gong yi jin hang you hua 、bi jiao ,jie xia lai dui bu tong yue fen dou fu chai xie guo jiao te xing cha yi jin hang bi jiao ,zui hou dui guo jiao zai ning gu xing fa jiao ru zhong de ying yong jin hang chu bu tan jiu 。zhu yao jie guo ru xia :bu tong yue fen 、bu tong de ou dou fu chai xie zhu yao ying yang cheng fen cha yi xian zhe ,jiang you de ou dou fu chai xie han you feng fu de cu dan bai 、guo jiao 、huang tong 、Mg、Cadeng ying yang cheng fen 。guo jiao de lv (yi de dao guo jiao chan pin zhi liang zhan dou fu chai xie fen mo zhi liang bai fen bi ji )wei 4.24%~18.24%,5~9yue dou fu chai xie guo jiao de lv xiang dui jiao gao ,zai 15%yi shang ,kuo ge yong yu guo jiao di qu 。zhu cheng fen fen xi fa zeng ge ping jia bu tong yu chu li dui dou fu chai xie guo jiao te xing de ying xiang jie guo fa xian :sui ran zheng qi 、wei bo yu chu li di gao le guo jiao de lv 、ban ru tang quan suan han liang (yi guo jiao chan pin suan jie hou ban ru tang quan suan han liang ji )、se ze ,dan xiang tong tiao jian xia guo jiao ning jiao te xing ming xian jiang di ,ju zeng ge ping fen cong gao dao di wei :wei chu li >wei bo >suan jin pao >zheng qi >tang piao >leng dong ,shui ming yu chu li bu neng hen hao de di gao guo jiao pin zhi 。liang chong di qu fang fa jie guo bi jiao biao ming :suan di qu fa guo jiao di qu lv he ban ru tang quan suan han liang jun gao yu chao sheng bo fu zhu suan di qu fa ,ji ta zhu yao cheng fen he xing zhi bing mo ming xian cha yi ,yin ci suan di qu fa jiao hao ,zui jia gong yi tiao jian wei :liao ye bi 1:30,di qu wen du 88℃,di qu shi jian 2.2 h,rong ye p H 1.6,gai tiao jian xia 10yue fen guo jiao di qu lv wei 10.57%。zhu cheng fen fen xi fa zeng ge ping jia bu tong yue fen dou fu chai xie guo jiao te xing zeng ge ping fen cong gao dao di wei :9yue >7yue >8yue >10yue >6yue >5yue ,biao ming bu tong yue fen dou fu chai xie guo jiao pin zhi cha yi jiao da 。7~9yue dou fu chai xie guo jiao de lv wei 15.30%~18.24%,ban ru tang quan suan han liang wei 81.48%~81.96%,ning jiao 、ru hua xing neng jiao hao ,zeng ge de fen ming xian gao yu ji ta yue fen ,geng kuo ge yu guo jiao de di qu li yong 。guo jiao zai ning gu xing fa jiao ru zhong de ying yong yan jiu fa xian :dou fu chai xie guo jiao tian jia liang wei 0.05%shi fa jiao ru pin zhi jia ,ju jie jin yu ju pi guo jiao tian jia liang wei 0.15%de fa jiao ru 。shui ming dou fu chai xie guo jiao dui fa jiao ru wen ding xing zuo yong ming xian ,ju you yu pu tong shi shou ju pi guo jiao ,you jiao gao de ying yong jia zhi 。
